If so, bring your culinary expertise to this position located at the Maplehurst Correctional Complex with the Ministry of the Solicitor General. Please note: This position requires working with and providing direction to inmate helpers (and may be eligible for a Custodial Responsibility Allowance).
About the job
• Oversee the production, delivery and service of meals and restricted diets, and ensure food preparation meets proper storage, assembly and portion control standards
• Provide direction, orientation and supervision to cooks, food service helpers, and offender helpers
• Ensure the safety and security of work area, equipment and staff, and prepare occurrence and accident/injury reports
• Oversee and maintain sanitary conditions, and ensure cleanliness and hygiene standards are met
• Maintain a daily inventory of food supplies, pre-determine menus, and make changes to menus if required
• Order and purchase supplies and equipment
• Assist in the overall food services operation
What you bring to the team
Mandatory requirements
• You have a valid Cook's Certificate (or you have equivalent knowledge and experience to be eligible to write the certificate examination)
• You are currently certified in First Aid and Heartsaver (or are able to obtain)
Food Services Knowledge and Experience
• You have extensive knowledge, skills, and experience with large volume cooking/baking principles, cook-chill/retherm, and standard cooking and food preparation/storage procedures and methods
• You have sound knowledge of the proper use of kitchen equipment and tools and can instruct cooks and helpers
• You have knowledge of portion control and food safety practices
• You have knowledge of health and safety standards and practices (i.e. Public Health Act, Health Protection and Promotion Act, Sanitation Code for Canada's Food Industry, Occupational Health and Safety Act, Workplace Hazardous Materials Information System (WHMIS))
• You can comply with and enforce institutional security practices/procedures to ensure safety and security of the kitchen facility and inmate helpers
Leadership and Supervisory Skills
• You can instruct and direct cooks, helpers, and inmate helpers in cooking methods and principles of kitchen cleanliness and appraise performance
• You have organizational and motivational skills to oversee and coordinate work of others to produce a very large number of cook-chill/retherm or standard meals in a high volume kitchen operation
Communication Skills
• You have demonstrated tact and diplomacy to instruct cooks and helpers as well as counsel inmate helpers
• You can address quantity and/or quality issues and explain equipment problems to service providers
• You have written communication skills to prepare various reports
• You have basic computer skills to input, track, and record information
Analytical and Problem-Solving Skills
• You can identify and assess workplace hazards, equipment malfunction and food services issues
• You can address issues related to food quality, sanitation, or hygiene control
