About the job
You will:
• prepare, cook, and serve three meals per day for inmates and staff
• train, instruct and supervise inmate cooks and helpers in the preparation of meals on an assigned shift.
What you bring to the team
Mandatory requirements
You must have:
• possession of Journeyman Chef's Certificate as issued by the Ministry of Training, Colleges and Universities OR sufficient acceptable experience in volume cooking
• valid First Aid and Heartsaver Certificate or the ability to obtain
• ability to work weekends, and holidays
Technical knowledge:
• You have knowledge of cooking methods/procedures, food preparation/storage practices, portion control standards, and Food Service Guidelines
• You are able to prepare a variety of foods and accommodate diverse dietary needs
• You have experience with volume or industrial cooking and baking
• You can use commercial/industrial kitchen equipment and tools to prepare food and meals as well as instruct others on proper usage
• You have knowledge of kitchen and workplace health and safety (such as the Public Health Act, Occupational Health and Safety Act, Health Protection and Promotion Act, Workplace Hazardous Materials Information System (WHMIS), etc.)
• You are able to ensure compliance with standards/regulations on food preparation/storage, sanitation, food safety, proper equipment operation/utilization, etc.
Other Essential Skills
• You have good communication and interpersonal skills in order to work with other staff as well as instruct, train, supervise and control inmate kitchen workers
• You have written communication skills to identify and assess workplace hazards, equipment malfunctions and food service issues
• You have basic proficiency with computers to input, track and record data
